CHAPTER ONE

Objectives of the Study

This study aims to achieve three specific objectives:

  1. To identify the determinants of access to health education among poultry farmers in Lagos State.
  2. To assess the implications of unequal access to health education on the nutrition transition among poultry farmers in Lagos State.
  3. To recommend strategies for improving access to health education in extension services for poultry farmers in Lagos State.

LITERATURE REVIEW

2.1 Conceptual Framework

2.1.1 Access to Health Education

Access to health education is a critical element in enhancing the well-being of individuals and communities (Bobola et al., 2019; Midingoyi et al., 2019). In the context of poultry farming in Lagos State, Nigeria, access to health education is a pivotal determinant of the overall health and nutrition choices of poultry farmers. Access to relevant health education empowers farmers with knowledge and skills to make informed decisions about their health, agricultural practices, and dietary choices (Johnson et al., 2020). Poultry farming communities, such as those in Lagos State, are diverse and often face unique health challenges related to their occupation (Oladimeji et al., 2017). Access to health education can be instrumental in addressing these challenges.

The importance of access to health education lies in its potential to prevent diseases and promote healthier lifestyles among poultry farmers (Bryan et al., 2021). Health education programs can provide farmers with valuable information on disease prevention, vaccination, safe handling of poultry products, and nutrition (Ma & Wang, 2020). Such knowledge not only safeguards the health of farmers but also impacts the quality and safety of the poultry products they produce (Esiobu et al., 2022).

Despite its importance, access to health education among poultry farmers in Lagos State may be influenced by various factors. These factors include socio-economic status, level of education, proximity to health services, and the availability of extension services (Consul & Famoye, 2018). Farmers with limited access to education and resources may face challenges in receiving relevant health education (Nyantakyi et al., 2021). Therefore, understanding these factors and how they affect access is crucial in designing effective health education programs tailored to the specific needs of poultry farming communities in Lagos State (Emaikwu et al., 2022).

In summary, access to health education is an essential component of improving the health and nutrition choices of poultry farmers in Lagos State. This access empowers farmers with the knowledge needed to prevent diseases, adopt healthier practices, and produce safe poultry products. RESEARCH METHODOLOGY

Introduction

This chapter outlines the research methodology employed in this study, which aims to investigate the determinants of access to health education and their impact on nutrition transition among poultry farmers in Lagos State, Nigeria. The methodology encompasses various aspects, including the research design, population of the study, sampling technique, sources and methods of data collection, data analysis, validity and reliability of the study, and ethical considerations. Each of these components is discussed concerning relevant research methods and principles (Saunders, Lewis, & Thornhill, 2019; Anderson, Fontinha, & Robson, 2020; Creswell & Creswell, 2018).

Research Design

This study utilizes a quantitative survey research design. The choice of this design is justified based on the research objectives and the need to gather data from a large sample of poultry farmers in Lagos State. Quantitative surveys are well-suited for this purpose as they allow for the collection of structured data on a wide scale, facilitating statistical analysis of the determinants of access to health education and their effects on nutrition choices (Creswell & Creswell, 2018). This research design is effective in providing a systematic understanding of the relationships and variables under investigation, as it offers the capacity to test hypotheses, establish associations, and generate generalizable results (Saunders et al., 2016).

Summary of Findings

The research study investigated the determinants of access to health education among poultry farmers in Lagos State, with a specific focus on the implications of unequal access to health education on nutrition transition in this community. The study also aimed to identify strategies for improving access to health education within extension services. The findings revealed several key insights that shed light on the complex relationship between access to health education and nutritional choices among poultry farmers in Lagos State.

Determinants of Access to Health Education: The study revealed that the availability of health education resources is a significant factor in determining access for poultry farmers in Lagos State. Over two-thirds of the respondents (67.3%) either strongly agreed or agreed that the availability of resources significantly influenced their access to health education. This suggests that the presence of educational materials, facilities, and trained personnel plays a pivotal role in determining whether farmers can access and benefit from health education. Access to resources is vital for delivering health education effectively, and these findings underscore the need for resource allocation to bridge gaps in access.

Impact of Economic Status: Another key finding from the study was the significant influence of personal income and economic status on access to health education. A considerable majority of respondents (73.1%) either strongly agreed or agreed that their personal income and economic status influenced their access to health education. This finding highlights that socio-economic disparities among poultry farmers can create significant barriers to accessing health education. Farmers with lower incomes may face challenges in accessing educational materials and services, ultimately impacting their nutrition choices and overall well-being.

Proximity to Health Education Facilities: The proximity of poultry farmers to health education facilities also emerged as a critical determinant of access. Nearly 68.3% of respondents either strongly agreed or agreed that their proximity to health education facilities impacted their access to health information. This finding underscores the need for strategically locating educational facilities and services to ensure that farmers can easily access health-related information and resources. Proximity to these resources can facilitate better engagement and enable farmers to make informed decisions about their dietary practices.

Nutrition Transition and Access: The research demonstrated a close link between limited access to health education and unhealthy dietary choices among poultry farmers in Lagos State. Over three-quarters of respondents (78.8%) either strongly agreed or agreed with this statement, emphasizing the critical role of health education in shaping dietary preferences. The study findings imply that addressing access issues can lead to healthier dietary choices among farmers, which can subsequently contribute to improved well-being and reduced nutrition transition.

Strategies for Improvement: The research findings indicate that there is substantial support among poultry farmers for several strategies aimed at enhancing access to health education. Community-based health education programs received strong backing from respondents, with 70.2% either strongly agreeing or agreeing with this approach. Collaborative efforts between governmental and non-governmental organizations also found favour, with 72.1% of respondents showing support. Furthermore, offering incentives, such as subsidies or training, was strongly endorsed by 84.6% of respondents.

These findings collectively suggest that poultry farmers in Lagos State are receptive to diverse strategies aimed at improving access to health education. The results highlight the need for tailored, community-based approaches that address the specific challenges faced by poultry farmers. Collaborative efforts between different stakeholders, including government and non-governmental organizations, hold promise for addressing access issues effectively. Moreover, the strong support for incentives signifies that financial and non-financial motivators can play a pivotal role in encouraging farmers to actively engage with health education programs.

In conclusion, the research findings emphasize the critical importance of addressing access to health education among poultry farmers in Lagos State. The availability of resources, socio-economic status, and proximity to educational facilities all play significant roles in determining access. Addressing these determinants can lead to healthier dietary choices and mitigate the effects of nutrition transition. The study also highlights the receptiveness of poultry farmers to various strategies aimed at improving access, underlining the potential for community-based, collaborative, and incentive-driven approaches to enhance health education access in the poultry farming community. These findings provide valuable insights for policymakers, governmental agencies, and organizations working to improve the health and well-being of poultry farmers in Lagos State.

Conclusion

The hypotheses tested in this study sought to examine the relationships between access to health education and various factors that influence nutrition transition among poultry farmers in Lagos State. The findings provide valuable insights into the complex interplay of access, resources, socio-economic status, proximity to health education facilities, and their implications for dietary choices and nutrition transition.

The results confirm that the availability of health education resources significantly influences access, highlighting the importance of equipping educational facilities with the necessary materials and trained personnel. Additionally, personal income and economic status emerged as substantial determinants of access, emphasizing the need to address socio-economic disparities among poultry farmers to promote equitable access to health education. Proximity to health education facilities also plays a pivotal role, indicating the importance of strategic placement to ensure accessibility for farmers.

Furthermore, the study revealed a strong link between limited access to health education and unhealthy dietary choices, which has implications for the ongoing nutrition transition in this community. These findings underscore the need for interventions that enhance access, ensuring that poultry farmers receive the education and support necessary to make healthier nutritional choices.

In conclusion, this study’s results highlight the critical importance of addressing access to health education among poultry farmers in Lagos State to mitigate the challenges posed by nutrition transition. Policymakers and stakeholders should focus on resource allocation, socio-economic empowerment, and strategic placement of educational facilities. By improving access to health education, it is possible to positively influence dietary preferences and promote better overall well-being within the poultry farming community in Lagos State.

Recommendations

Based on the findings of this study, several recommendations can be made to improve access to health education and mitigate nutrition transition among poultry farmers in Lagos State:

  1. Enhance Health Education Resources: It is imperative to improve the availability of health education resources in agricultural communities. Local and national governments, in collaboration with relevant organizations, should invest in educational materials, training programs, and qualified personnel to equip health education facilities adequately.
  2. Address Socio-Economic Disparities: Efforts should be directed towards reducing socio-economic disparities among poultry farmers. Initiatives, such as subsidized health education programs and income-generating opportunities, can be introduced to ensure that all farmers, regardless of their economic status, have equal access to health education.
  3. Strategic Placement of Health Education Facilities: Government and health education authorities should strategically place health education facilities in areas with a higher concentration of poultry farmers. This approach will increase accessibility, making it more convenient for farmers to engage in health education programs.
  4. Promote Healthier Dietary Choices: Educational programs should be designed to not only provide information but also motivate poultry farmers to make healthier dietary choices. Awareness campaigns, cooking demonstrations, and practical workshops can encourage the adoption of nutritious diets within the community.
  5. Collaboration and Incentives: The government and non-governmental organizations should collaborate to improve access to health education. Collaboration can lead to the development of targeted programs and the allocation of resources to address specific challenges. Additionally, offering incentives, such as subsidies or training, can motivate poultry farmers to actively participate in health education programs, ensuring their effectiveness.

Contribution to Knowledge

This study significantly contributes to the existing knowledge by shedding light on the determinants of access to health education and their implications for nutrition transition among poultry farmers in Lagos State. It offers a comprehensive understanding of the complex relationship between access to health education, dietary choices, and the challenges faced by agricultural communities. The research underscores the vital role of health education in preventing nutrition transitions from traditional to processed diets, which are often less nutritious and associated with adverse health outcomes. This knowledge contributes to the broader field of public health and nutrition by emphasizing the importance of targeted interventions in agricultural settings to combat health disparities and improve overall well-being.

Moreover, this study adds to the academic literature by exploring the unique context of poultry farming in Lagos State, Nigeria. While there is existing research on health education and nutrition transitions, this study provides specific insights into the challenges faced by poultry farmers in accessing health education resources. By highlighting these issues, it contributes to a more nuanced understanding of the diverse factors influencing dietary choices within agricultural communities. The findings of this study are particularly valuable for policymakers, health practitioners, and researchers, as they offer practical recommendations for improving health education access and nutrition outcomes among poultry farmers, with the potential for broader applications in similar agricultural settings.
